Rhubarb Gastrique

This rhubarb gastrique has such a great balance between being sweet and sour, while also feeling fresh with the bits rhubarb in the gastrique. Pair with a roasted duck breast, an appetizer or even in a cocktail!

Ingredients

  • 1 cup granulated sugar
  • 1 cup rice wine vinegar
  • 2 cups fresh rhubarb (diced)

Instructions

  1. In a small sauce pot, add the sugar,the rice wine vinegar and stir to dissolve the sugar.
  2. Slowly heat the mixture to a boil and reduce the heat to a steady simmer.
  3. Continue to cook at a steady simmer for about 8 minutes or until the liquid begins forming bubbles on top of the bubbles from boiling.
  4. Add the rhubarb and continue to cook for 4-5 minutes on low. When the sauce is reduced to the right consistency you will have 2 cups/16 ounces of total sauce.
  5. Cool the liquid completely and use how you'd like!
