Coconut Tapioca Pudding with Mango and Toasted Sesame

This coconut tapioca pudding recipe is a quick and easy dessert to make when you're craving something refreshing. It's delicious, good for you and full of Thai-inspired flavors such as mango, coconut milk, mint and sesame.


It has a thick but creamy consistency and we guarantee all of your family and friends will love this healthy-ish dessert!

What is Tapioca?

Tapioca is a gluten-free starch that is derived from the cassava root, also known as yucca. The most popular forms of tapioca used are the tapioca powder and tapioca pearls. Both forms are typically used as a thickener for both savory and sweet dishes.

Ingredients for Coconut Tapioca Pudding

Not only is tapioca pudding extremely easy to make, it only requires few ingredients. Here's what you'll need:

  • Tapioca: We used Kraft-Minute Tapioca brand for this recipe but if you decide to use another brand/type of tapioca, just make sure to adapt the recipe accordingly.
  • Cooking Liquid: Unlike most tapioca pudding recipes which are made with milk, we like ours with a combination of coconut milk and water. We do this in order to give the pudding a nice delicately-sweet coconut flavor while keeping the dessert dairy-free. We add the water to keep the pudding from becoming too thick and dry while cooking.
  • Sweetener: While you could certainly use granulated sugar or another sweetener of your choosing, we use honey. We find that honey brings some floral notes and a gentle sweetness to the pudding.
  • Complementary Flavors/Garnishes: We love using Thai-isnpired flavors for the pudding so we top it off with mango, mint and toasted sesame.

Tips for Making Tapioca Pudding


  1. Make sure you stir constantly, with a whisk, and break up any large clumps when you first add the tapioca. If you don’t, the tapioca will start to absorb the coconut milk and form large clumps that will remain hard after cooking.
  2. You will need to adjust the recipe accordingly if you use another brand/type of tapioca. The best way to do this is to read the directions on the package of the tapioca you got and adapt the liquid proportions accordingly.

Ingredients

  • 4 ounces (half a box) of Tapioca
  • 1 can (13.5 ounces) of full-fat coconut milk
  • ½ cup of water
  • ¼ cup of honey
  • 1 pinch of salt
  • 1 tablespoon of vanilla extract
  • The zest and juice of 1 lime

To Garnish:

  • Diced mango (about 1 cup)
  • Toasted white sesame seeds (about 3 tablespoons)
  • Fresh mint (about 20 sprigs-plucked)

Instructions

  1. Add the coconut milk, the vanilla extract, the water and salt to a pot and bring them to a simmer.
  2. Once the liquid begins to simmer, add the tapioca, stirring with a whisk, constantly to break up all of the clumps that form. Once all the clumps have been broken up, continue to cook on a medium heat until the mixture reaches a boil (1-2 minutes). Stir constantly to ensure nothing sticks to the bottom of the pot.
  3. As soon as the mixture reaches a boil, turn off the heat and mix in the lime juice and zest, along with the honey. (You may want to add more or less of the lime and honey depending on personal preferences.)
  4. Immediately place the tapioca into another container and chill for at least one hour.
  5. Portion the tapioca into 4 individual bowls and top each with some of the diced mango, the fresh mint, and the toasted sesame seeds.

Note: If you use a different type of tapioca than what we list you will need to adapt the cooking process/times according to the package's instructions.
