Ingredients

  • 8 large dates (pitted)
  • 2 ounces of mascarpone
  • ⅛ teaspoon ground cinnamon
  • ⅛ teaspoon of ground nutmeg
  • The juice and zest of 1 lemon
  • ⅛ teaspoon of vanilla extract
  • 1 pinch of salt

Instructions

  1. Put your mascarpone into a bowl and add the cinnamon, nutmeg, vanilla, salt, zest, and juice of a lemon and mix until everything is fully combined and the mascarpone seems light and airy. Taste some of the filling, adjust the seasoning to your liking, and then transfer the filling into a pastry bag with no tip.
  2. Gently cut each date lengthwise on one side so that the center is exposed but the date is not fully cut in half. Pipe enough filling into each date so that each date is full, and press each date almost closed so that the filling pokes out of the cut side, similar to condiments on a hot dog.
  3. Garnish each date with either additional lemon zest or a sprinkle of cinnamon and serve chilled or at room temperature.
