When we think of vegetables to add to our meals, if we're being honest, we don't normally think of beets. However, this simple roasted beet recipe definitely changed that for us.
The beets have a great subtle sweetness to them that is perfectly balanced out by the rosemary, olive oil and salt. Not only do they make a great addition to an already prepared meal (veggies, anyone?) but they could also be side dish for your next Thanksgiving meal! Yes, we know 2021 just started but we're already thinking about Thanksgiving and holiday season. Can you blame us?
A four-ingredient recipe? Um, YES PLEASE! Seriously, these oven roasted beets are so delicious and incredibly easy to make. While the beets do take quite a while to roast - 90 minutes to be exact - you can definitely prepare them in advance or cook them while you make your main dish. Here's all you need:
