Oven Roasted Beets

When we think of vegetables to add to our meals, if we're being honest, we don't normally think of beets. However, this simple roasted beet recipe definitely changed that for us.

The beets have a great subtle sweetness to them that is perfectly balanced out by the rosemary, olive oil and salt. Not only do they make a great addition to an already prepared meal (veggies, anyone?) but they could also be side dish for your next Thanksgiving meal! Yes, we know 2021 just started but we're already thinking about Thanksgiving and holiday season. Can you blame us?

Ingredients for oven roasted beets

A four-ingredient recipe? Um, YES PLEASE! Seriously, these oven roasted beets are so delicious and incredibly easy to make. While the beets do take quite a while to roast - 90 minutes to be exact - you can definitely prepare them in advance or cook them while you make your main dish. Here's all you need:

  • beets
  • rosemary
  • olive oil
  • Salt to taste

Tips for making oven roasted beets

  • Wrapping the beets in plastic: We recommend that the beets are covered or wrapped with plastic after you take them out of the oven for about 10 minutes. The steam created will help release the skins and will make them easier to peel.
  • Lots of variations: With a recipe with this one, you can use it as a base and create your own variations. We use rosemary and olive oil but you could also try tossing them with orange zest and toasted caraway seed after roasting, roasting them with one cinnamon stick and star anise for a sweet and aromatic accompaniment or marinating them  with thyme and balsamic vinegar after roasting and peeling!

Oven Roasted Beets

Beets that are roasted to bring out the subtle sweetness complemented by the flavor of rosemary and olive oil. They make a great side dish, snack or foundation to a vegetarian dish of its own.















  • 4 medium-sized beets
  • 4 sprigs rosemary
  • ¼ cup olive oil
  • Salt to taste


  1. Preheat your oven to 350 F.
  2. Toss the beets in olive oil and add them, along with the rosemary to a pan and wrap with aluminum foil.
  3. Bake at 350 F for about 90 minutes until you can easily pierce with a fork.
  4. Once finished baking, pull the beets from the oven and immediately transfer them into a container that has a cover or that you can wrap with plastic and do so. Keep them covered for about 10 minutes.
  5. Once the beets have cooled to room temperature, peel the skin off and cut them to your desired size.
  6. Toss the beets with olive oil and salt to taste before serving.
